Cajun Chicken Pasta: A Quick, Yummilicious Scrumptious Meal

Sometimes I feel lazy and do not like to cook an elaborate menu at the dinner table, especially on the weeknights. One pot dishes, soups, sandwiches or pasta dishes come handy on those occasions. This Cajun Chicken Pasta is the perfect recipe for a lazy weeknight meal when you do not like to cook much but like to have a delicious and scrumptious meal.

This recipe comes out in less than 30 minutes and tastes fancy just like in a restaurant. The flavor combination is perfect with all the veggies and chicken and a spicy kick from the Cajun seasonings. It is a the bestay to use up the leftover veggies and chicken from the fridge and cook up a yummy and delicious meal in no time! Here is how to make it.

Recipe

Preparation Time: 10 mints

Cooking Time: 20 mints

Serves: 2

Ingredients

200 g linguini or fettuccini pasta

2 medium chicken breast fillet

½ medium onion

5-6 button mushrooms

½ green bell pepper

½ red bell pepper

½ teaspoon garlic powder

1 teaspoon salt

1 teaspoon black pepper

2 teaspoons Cajun seasonings (see tips)

2 teaspoons olive oil

2 tablespoons butter

½ cup heavy cream

¼ cup parmesan cheese (grated)

2-3 sprigs of parsley (for garnish)

Method

Bring a large pot of water to a boil. Salt the water before boiling. Cook the pasta in the boiling water as per packet instructions or until al dente. Drain the pasta and keep aside.

Meanwhile cut the vegetables in long thin strips. Cut the chicken into bite size, thin strips.

Marinate the chicken with salt, black pepper powder and garlic powder. Heat a skillet and add half the butter and olive oil and cook the chicken strips for 5-7 minutes. Drain and keep aside.

In the same pan, add the rest of the butter and oil and sauté the onions until translucent. Add the mushrooms and bell peppers and sauté for 3-5 minutes. Add the chicken and the Cajun seasonings and mix well. Add the cream and slowly cook at reduced heat for 2-3 minutes. Taste the sauce and adjust the seasonings. Toss the cooked pasta in the sauce and heat through. Sprinkle the grated parmesan cheese and give a final mix. Garnish with chopped parsley.

Serve with some extra grated cheese. Enjoy!

Tips

You may use spaghetti or any pasta of your choice. Cajun seasonings is a mix of different dried spices. It is a combination of paprika, salt, black pepper, cayenne pepper, dried chili flakes, dried thyme, dried oregano, garlic powder and onion powder.
