Spanish Omelette: A Wholesome, Yummy Breakfast

Sarika recalls a trip to Spain. Hotel breakfasts in Spain offered cereals, fruits, cooked breakfast, cheeses, hams, different flavoured yogurts, coffee, juices and two very popular breakfast food we enjoyed were Spanish bread pudding topped with sugar and cinnamon or honey and Spanish Omelette. After returning home she made Spanish Omelette, a couple of times, and every time her husband and son loved it. They keep their Spain trip alive with the Spanish Omelette. Here’s the recipe, in the weekly column, exclusively for Different Truths.

We are different in many sense, I mean my husband and I, but travelling is one common interest which we enjoy together in fact our son too. New places, new adventure, new roads, new people and new food always attracts me. When we travel, we not only discover new places, we also discover ourselves. So, last May we decided to travel Spain, and had fabulous time with sun, sand and the beaches. Many people skipped Spain trip during Europe trip, considering it will be very hot in May. But we had lifetime experience from our Spain trip. It is a very happening place – in the sense there’s always something new to do. Apart from hills, parks, woodland, Gothic cathedral, Picasso museum, markets, sea, beaches the best part of the Spain is its food culture. Food plays a very important role in this country. Spanish food is very healthy and delicious too. For seafood lovers it is a heaven.

Spanish usually eat small breakfast and large midday meal. But for me breakfast is very important meal of the day, I can’t skip my breakfast, so whenever my husband plans any trip he makes sure we should have proper breakfast. Lucky me!

Our hotel breakfasts in Spain offered cereals, fruits, cooked breakfast, cheeses, hams, different flavoured yogurts, coffee, juices and two very popular breakfast food we enjoyed were Spanish bread pudding topped with sugar and cinnamon or honey and Spanish omelette.

And after returning home I tried my hand on Spanish omelette, a couple of times and every time father and son loved it. We keep our Spain trip alive in our hearts with the Spanish Omelette.

Am sharing the recipe with bit of my twists.

Spanish Omelette

Serving – 4                                                                            Cooking Time – 20 minutes

Ingredients

1. 6 eggs

2. 4 chopped green chilies

3. 3 potatoes, cut into cubes, cleaned with salts

4. 4-5 tbsp. oil for potato fry

5. 1tbsp. chopped coriander leaves

6. 2tbsp. sautéed onions (in little butter)

7. Black pepper powder

8. Garlic powder

9. Black salt to taste

10. 1tbsp oil. to cook the omelette

Method

Peel and cut the potatoes in a pan heat 4-5 tbsp. oil and stir the potatoes until cooked. In a mixing bowl break the eggs and whisk them till fluffy.

Add chopped coriander leaves. Add 2-3tbsp. sautéed onions, green chillies, black pepper and some black salt. Mix in the cooked potatoes.
In a pan add a Tbsp of oil and pour the mixture.

Cook for a while. Cover it with a lid and cook for another few minutes. Flip and cook from the other side.

Once ready, cut and plate imaginatively.

Now, serve the favourite breakfast.
